Consider coffee: Only 25 percent of the coffee that’s produced under some certification label is sold with a certified label. The rest is sold as conventional coffee with no price premium. In surveys, consumers say sustainability is important to them, but studies of market behavior show that their purchasing of certified products is still very low.
